What is considered german wheat,
when I look it up online I can't seem
to find anything that states specifically
German Wheat.

Cat 15 of the BJCP
15A. Weizen/Weissbier
15B. Dunkelweizen
15C. Weizenbock
15D. Roggenbier (German Rye Beer)

Although not under the same category it's still technically a german style made with a large portion of wheat
17A Berliner Weisse

as far as ingredients Weyermann is a German maltster makes a a few malted wheat products

I suppose any wheat malt would work, but to be extra authentic, grab some form a german maltster (like Weyerman, as noted above). Sometimes the coutry of origin is not in the name, but is significant (British pale malt, belgian pilsner malt, etc.).
