I always wanted to get into home brewing. I just started a batch of mead last night. I see people talk about tasting before and after. Do I taste when I go to bottle it or when it goes to secondary. Looks like I will be getting into trouble trying different things.

Nothing wrong with trying any time you want! I'd certainly taste at every racking and bottling, and then as soon as possible after that. You can use this information to learn how the mead (and anything else) changes over the course of the process.
