Just what it sounds like. Anyone know where I can find non gmo maltodextrin?

Look for Briess Sweet Tapioca Maltodextrin...

Breworganic perhaps? I believe all their stuff is organic. They even have an organic GF kit now, which I am about to brew for the second time. Made with Buckwheat not Sorghum! Anyway, I'd check them out.

Seven Bridges Cooperative sells organic maltodextrin in 1 lb, 3 lb, & 55 lb.

Edit: hmm, just realized breworganic is the URL name for Seven Bridges Cooperative.
