I can't quite lager (basement isn't cool enough), and since its practically November, I wanted to whip up an ale yeast oktoberfest.

I did already look in the recipe database, only one was not a lager.

I am looking for other recipes that you've done but not posted. I'm after all grain, but can convert your PM to AG as needed.

mostly i wanna see grain bills, hops, and particularly what ale yeast will work best. I can hold mid 60's pretty easily.

I also have 4 jars of washed Wyeast Kolsch yeast, which seems clean and likes mid 60's....but I have no idea how appropriate it'd be for such a dark, malty beer.

I did this about 4 weeks ago and it tastes great.

Edwort even gave it a thumbs up.

Cut it in half or use Beersmith (et al) to scale it back to a 5-gallon batch:

Also, mash it at 158-160 for a residual malty sweetness. I used a Safale-05 yeast, but a Kolsch would do very well.

Boil Size: 13.69 gal
Estimated OG: 1.051 SG
Estimated Color: 13.0 SRM
Estimated IBU: 20.0 IBU
Brewhouse Efficiency: 64.0 %
Boil Time: 60 Minutes

Have you downloaded that monstro-recipe PDF that was floating around here a few weeks ago (if not, PM me and I'll email it to ya)? There is only one Oktoberfest in there, and it is very similar to Biermuncher's recipe, but it seems like the guy conditioned it warm and then popped it in the fridge for (his words) "as long as you can without drinking it". I figure I'm going to give one of these a try soon, because both me and the wife like it.

I have tried several oktoberfest ale recipes and have yet to get close, good beer but still never close to a real oktoberfest!! Its all about the yeast and cool fermentation in my book. Good luck
