Recipe Type: Extract
Yeast: Wyeast 3711
Batch Size (Gallons): 5
Original Gravity: 1.048
Final Gravity: 1.006
IBU: 28
Boiling Time (Minutes): 60
Primary Fermentation (# of Days & Temp): 7 days @ 68
Secondary Fermentation (# of Days & Temp): 7 days @ room temp
Tasting Notes: citrusy, peppery, clean finish

New Zealand Saison

6oz Caravienne Malt
6oz Caramunich Malt
4oz Crystal 20L
Steeped for 30 minutes at 155

3lbs Extra Light DME
8oz Clear Candi Sugar
.50oz Pacific Jade 40 min
.25oz Pacific Jade 15 min
1lb Wheat DME 15 min
1lb Extra Light DME 15 min
.25oz Nelson Sauvin 10 min
.25oz Nelson Sauvin 5 min
.25oz Pacific Jade flameout
.50oz Nelson Sauvin flameout

Wyeast 3711 French Saison yeast

It's a lower ABV than the last Saison I did (9%) so it made for a much easier drinking beer during the summer. The hops weren't overwhelming and supported the yeast flavor while adding some interesting tastes of their own. Very easy drinking beer.

I make a very similar beer with 3711, except I use Nelson Sauvin and Galaxy. I am going to make some on Monday---the only brew I have rebrewed 3 times.
