Default new pectic enzyme question

Ok folks, what is the minimum temp that pectic enzyme works at?

I froze fruit, broke it up, added pectic enzyme, & mixed it up some more. Mmm peaches.
Gonna add this to mead that is fermenting currently. I want to process the fruit separately as to not blow out the aroma throught the airlock.
