This article got me interested.

It's for sous vide cooking with a rice maker, but could easily be adapted to be used as a temperature controller for a kegerator or ferm chamber.

yup, many people on here do this including the build I'm starting. Check out the Automated brewing subforum.

They already exist

BrewPi(http://brewpi.com/) is a open source project that has been going on for awhile, although it uses a Raspberry Pi + Arduino because it gives you a ton of other logging and data display features via a webpage.

There is also the TeensyPi that is posted here in this DIY forum that does something similar.
