I imagine SHARP cheese is Key, be it parmesan or sharp cheddar.

Emeril Lagasse's mac and cheese is awesome. I tired quickly of his antics, but that recipe rocks. It's on the Food TV site.

Might I suggest the sparcest grating of nutmeg in the sauce?
