Recipe Type: All Grain   
Yeast: WLP810   
Yeast Starter: 1.5L   
Batch Size (Gallons): 5.25   
Original Gravity: 1.055   
Final Gravity: 1.015   
IBU: 40   
Boiling Time (Minutes): 60   
Color: 11.6   
Primary Fermentation (# of Days & Temp): 10 days @ 58F   
Tasting Notes: One of the tastiest single hop beers in existence, balanced beautifully with the malt   

If you're a fan of Anchor Steam Beer, you will absolutely love this recipe, which most of my buddies said was hands down better than Anchor. This is one of those beers where the keg seems to kick way before I expected. And it's relatively easy.

GRAIN BILL
8.0 lbs US 2-Row
1.5 lbs Munich Malt (10L)
13.0 oz Crystal 60L
6.0 oz Victory Malt
2.0 oz Pale Chocolate Malt

HOP SCHEDULE
22 g Northern Brewer @ 60 min
25 g Northern Brewer @ 15 min
25 g Northern Brewer @ flameout (steep for 5 minutes prior to chilling)

YEAST
WLP810 San Francisco Lager Yeast

MASH
152F for 60 minutes

FERMENTATION
- Chill wort to 56F (leave in ferm chamber for a couple hours if necessary)
- Pitch decanted 1.5L starter (activity within 12 hours)
- Maintain temp at 58F for first 4 days
- Bump controller up a few degrees per day until it reaches 68F, where beer will finish out
- Once FG is stable (10 days or so), crash beer to 32F for 4-5 days before packaging; if bottling, allow to lager longer; if kegging, keg and let lager on gas in kegerator for 10+ days.

I think I'm putting this as my wedding brew! This and a pale ale for a summer evening should be awesome!

You will not regret it. Make sure you give it at least 8 weeks- 3 for fermentation and 5+ for lagering. This isn't really necessary, but since it's for your wedding you probably want it as near perfect as possible. Cheers!
