I am using a medium big green egg and have two racks of St. Louis style ribs that I will have to cut in half to get them on the egg. If I use the grill extender and place a rack or two of ribs on that as well, will they still cook evenly?
Obviously planning on an indirect smoke so my first inclination is that it won't matter. What do you think?
