I have a converted 5 gallon Gatorade style water cooler that I use to mash. Works great. For a little bigger beers or bigger batches, not enough space. I can get another for free. So my question is, any difference between splitting the grains into two coolers instead of one bigger one?

No. Done it a bunch of times. Just split the grain equally and away you go.
