I have brewed my second batch and it taste sour like the first one. The first batch I let sit a week and the second I left for 2 weeks. Is the sour taste due to not Letting it ferment long enough? I really enjoy brewing but the taste is not that great.
Hard to say. Considering you had two batches come out like this it may be a sanitation issue. Your beer might be contaminated or it could be young and you need to let it sit for a while. Bacteria are the only culture some people have.
It's most likely an infection from not properly cleaning something/everything that touches the wort/beer. Then when you sanitize,if you did sanitize everything,the dirty stuff could harbor a few nasties that survived. Or you just didn't remember to saitize something that touched the beer. Like racking tubes & such. Or if your fermenters have spigots like your bottling bucket,& you didn't remove & clean them & the mounting hole. That sort of thing.
