Hi all. This is my first post and, still being quite the amateur, thought I'd start it with something basic.
My first bottling, I accidentally succeeded in getting a nice POP and haven't been able to since. Could someone give me a quick rundown? Or even an in-depth one.

Your first port of call should be a google search for "methode champenoise".

That, well at least wikipedia, will give you a run down on how its done properly.
