I'm planning to make a stout and so I bought some roast barley at the weekend.
I will probably have some left over -- could I safely use a small amount roast barley in a "dark lager" recipe, just for coloring mainly.

You probably could as long as it wasn't a lot. I did a black lager using chocolat and black patent grains. I just used roasted barley in an amber and it didn't darken it much but I think it adds a little bite.

yeah, you can use the dark grains for coloring only. just use an ounce or two of it to get the color and not pick up much flavor.

make sure not to steep them too long, 10-15 minutes is good for coloring

I would not use roasted barley in a lager, but that's just me. I would cold steep some chocolate malt and use that instead.
Heres a link explaining how to use that proceedure:

My Schwarzbier recipe uses 4 oz. in a 30 minute steep (along with other grains) at 150F for a 5 gallon batch.

On Tap -
  1. 3 year old Oak Aged Bourbon Porter
  2. Irish Red Rye
  3. Robust Porter
  4. Russian Imperial Stout
  5. Mirror Pond Clone dry hopped with Citra
  6. Mirror Pond Clone dry hopped with Centennial
Primary - Nada
Secondary -
