So I put two new batches in primary today. Same juice, organic michigan sweet cider, unpasteurized. One with wyeast Pasteur champagne, and one with wyeast Brett bruxellensis. My last batch with champagne is two weeks in the bottle and has a really nice effervescence and tart dry apple flavor. I'm excited to see how the Brett turns out.

Ok 6 days inane the champers version is glugging away. The Brett one just started to foam up today. Psyched!!
