Yeast: Wyeast 3711   
Yeast Starter: No   
Batch Size (Gallons): 9   
Original Gravity: 1.052   
Final Gravity: 1.008   
IBU: 15.7   
Boiling Time (Minutes): 60   
Color: 6   
Primary Fermentation (# of Days & Temp): 12 days   
Secondary Fermentation (# of Days & Temp): Forced carbed over 2 days   
Tasting Notes: Good and Refreshing at day 14!

I'm all about drinking beers fresh. This one was great at day 14 grain to glass. Kegging of course. Good and Refreshing!

6 lbs American Two-row Pale
5 lbs American Vienna
2 lbs American Wheat
1 lb Caramel/Crystal Malt - 20L
1 lb Flaked Corn (Maize)
1 lb Flaked Wheat
8 ozs Honey Malt
8 ozs Carafoam
(couple handfuls of rice hulls, just in case)

oz Cascade ~ pellet 3.2AA - 60 Minutes
oz Willamette ~ pellet 4.8AA - 60 Minutes
oz Cascade ~ pellet 3.2AA - 20 Minutes
oz Willamette ~ pellet 4.8AA - 20 Minutes
boil 1.5 ozs Dried Orange Peel, Sweet - 10 mins
oz Cascade ~ pellet 3.2AA - 5 Minutes
oz Willamette ~ pellet 4.8AA - 5 Minutes

French Saison (3711)

Mashed at 154F for 60 minutes.

recipe looks great, I think ill be making a 5 gallon batch of this next, what temp did you ferment at?

Also, orange peel, did that include the white pithey part, or just the zest?

I mashed at 154F and my brew closet was at about 68F. I really wanted to ramp up the heat after a couple of days but didn't get around to it. As for the orange peel it was dried sweet orange peel from my LHBS.

This brew was great. I'm very satisfied with the yeast even at that temp. I have never brewed the same batch back to back but am thinking of brewing this again next. The only factor I would play with is seeing how it comes out with a higher fermentation temp.
