Default Head retention

Hi all,

I'm going to do a hefeweizen from extract:

23L batch
3Kg coopers wheat liquid extract
500g muntons wheat dry extract
25g hallertau mittelfrueh, 1 hour boil
10g hallertau mittelfrueh, 5min boil
wyeast 3068
coopers priming drops

what do I need to do to get it to keep its head?

also opinions on the hopping please, beersmith says its ok but i'm no expert, I'm going for something like a franziskaner

You could steep like 8oz of Flaked Barley in your pot @ like 150 for 30-60 minutes...

Flaked barley adds great head retention, normally it would go in a mash but i dont see why you cant mini mash it ahead of your boil.
I stole the idea from the famous EdWort...

You end up with head like this on his Rye beer(using 8oz Flaked Barley)

8 oz of carapils steeped at 150 for 30 minutes will work too.

Would flaked wheat work as well?
I was really just going to stick with extract brewing because of the cost of malt grain but I guess a little bit of flaked barley of carapils would be a worthwhile investment
