Default Cascadian Dark Ale (Black IPA) Recipe Feedback

Hey, fellow homebrewers.

I'm attempting to formulate a recipe for a Cascadian Dark Ale (Black IPA), and would appreciate any feedback, especially about the hops schedule.


Grain Bill:
11 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 78.6 %
1 lbs Carafa II (412.0 SRM) Grain 2 7.1 %
1 lbs Caramel/Crystal Malt - 60L (60.0 SRM) Grain 3 7.1 %
8.0 oz Cara-Pils/Dextrine (2.0 SRM) Grain 4 3.6 %
8.0 oz Chocolate Malt (350.0 SRM) Grain 5 3.6 %

Hops Schedule:
1.00 oz Warrior [15.00 %] - Boil 90.0 min Hop 6 55.5 IBUs
0.50 oz Cascade [5.50 %] - Boil 30.0 min Hop 7 7.3 IBUs
0.50 oz Warrior [15.00 %] - Boil 30.0 min Hop 8 19.9 IBUs
0.50 oz Cascade [5.50 %] - Aroma Steep 10.0 min Hop 9 0.0 IBUs
0.25 oz Warrior [15.00 %] - Aroma Steep 10.0 min Hop 10 0.0 IBUs

Grain looks fine. Not sure you need the chocolate or at least that much.

Are you sure about the aa on your cascade? Mine is 7.3 aa and I'm hearing the new stuff this year is even higher (9 ish) I only use warrior at 60 min and love it there. Would do that and then move the flavor / aroma additions to 15 min and later. I've bee putting almost Hal my kettle hops in at flame out. Then dropping temp to 180 and letting it sit for about 15 min before proceeding with cooling. Give it a few stirs at 180 to pretend it is really a whirlpool addition.

I'll probably move the hops additions, around, like you suggested. Doing some reading... apparently Warrior works well for bittering, but has a less-than-great flavor/aroma characteristics. I have some old Cascade from last year (in the freezer), so part of it will be < 9%.

Sounds great. I love cascade and think it really suits the style. What is your expected OG?

I like the second hop schedule much better. But if you truly want some hop flavor and aroma you'll need to up the last 2 additions. At least 1 at flame out and 2 dry hop. Huge fan of uinta dubhe
