Hello again to you all,

I was finally able to sample a German Blonde I brewed a few weeks ago. It was a 1-gallon kit purchased from Northern Brewer.
The beer was not bad but I noticed a peculiar odor that reminded me of canned creamed corn. I've had commercial blonde ales before and don't remember this odor as a characteristic of those brews.
Has anyone experienced anything like this with a blonde ale?

You are describing the odor of Dimethyl Sulphide (DMS) which can show up if you don't boil long enough or if you leave the lid on your pot when you are boiling. Do a search for DMS and you can find out a lot about it.

That's exactly it! The odor was very subtle and I didn't notice a strong taste. It wasn't until I actually opened a can of creamed corn (serious, no joke) for dinner the other night that I finally noticed what I had been smelling. I did not cover the wort during boil. There was just one hop addition, 7 g of Perle for 60 minutes. The wort was covered and cooled for 25 minutes. I'll boil longer next time as I understand now that DMS is produced as the wort cools as well.

I also find myself wondering if one would notice low levels of DMS in highly hopped ales?

I remember the sierra nevada clone in BYO that I saw (1 or 2 issues ago) uses Pearle for bittering and cascade at the end with a 0 minute addition and possibly some for dry hopping. I don't remember what the additions were though. I believe there was one at 15 5 and 0

It's brew day and I'm getting ready for my first 5-gallon extract batch.
I posted a recipe earlier in the post but have made some changes to it.
My goal is a SNPA-like pale ale. I know it may be difficult to get the nice, mellow malty smoothness of SNPA with LME but hey, a guy has got to start somewhere!
Here is the recipe:
6.6 lbs Briess Golden Light LME
0.5 lbs Crystal 60
0.5 oz Magnum Pellet 60 mins
0.5 oz Perle Pellet 30 mins
1.0 oz Cascade Pellet 10 or 15 mins (haven't decided)
2.0 oz Cascade Pellet 0 mins
Safale US-05

I would have like to use fresh hops but they were unavailable at the local brew shop. I am also adding all the LME at the beginning of the boil. I'm not overly concerned with the color at this point and I think that is the only reason one would add half at flameout.
Does anyone have any suggestions or comments?!

Those hop additions look spot on, I'd do 15 minutes for the Cascade. You could eliminate 1 oz of Cascade at flameout if you wanted to save $2.

There is another reason to add half of your LME at flameout. Some people blame the boiling of all the LME for the "extract twang". This may or may not be the case but adding half late it the boil is pretty easy to do. You also could add half a pound of Crystal 10 for a little more maltiness. I don't think it would change the color or flavor by much.

A late extract addition of half or two thirds of the extract will give lighter color & no twang. Just cleaner flavor with nicer complexities.

Just wanted to give an update on this beer. It is excellent! I was worried as 10 days after bottling the beer had a very slight buttery taste. The taste wasn't there on bottling day so I was worried I oxygenated it or worse, a contaminant found its way in. I did what many have recommended and stored it at ~70 F for a few days and the butter taste was gone. All in all, I am extremely satisfied with my efforts!
A blonde ale is on the schedule for this weekend and I can't wait.
