I'm not into fruity Wits or Wheat's myself but my buddies son who is soon to be wed really likes the Shock Top Raspberry Wheat. For the wedding my buddy wants me to brew up about 20 gal of three different beers (Double Jack, Pale 31 and the Shock Top Raspberry Wheat) I'm good on the first two and I make a great Belgian Wit but really don't want to clone the Shock Top. Can I get away with making my usual Wit (sans coriander and orange) and adding the fruit in secondary (7 gal) how much and for how long? I guess the kid likes it real fruity. Really appreciate any help on this. TIA...
