I am thinking about breaking up the batches into 2.5 gallons each. You think i could split 5 gallon batch into two 3gallon fermenters?

Should be fine: you put five gallons in a ~6 gallon carboy so the two 3's would be more less equal. I hear Fermcap can control foaming in the fermenter as well as the boil so that might help with high krausen levels.

Never split a batch myself though.

Yes. I do it all the time. I've had a few blowoffs, but only in bigger beers. 2.5 gallons its about as big as I'd go.
