Going to brew this tonight. I should have an OG of 1.087 a FG of 1.024, and end up around 8.25% abv. I have the 11.5g packs of safale us-05 and will pitch dry.

You'll need 16 grams of dry yeast according to Mr. Malty if it's a 5 gallon batch.

Actually, would it hurt if I put two 11.5 packs in?

Nope, that'll be fine. If I were you i'd use two packs, and I would definitely rehydrate (not pitch dry).

Edit: don't just take my word for it. Here is why to rehydrate:
