So this is after 30 minutes of sitting. I used more water than I probably should have as I only can see 3 layers in each. A layer of beer an milky layer them a layer that looks like a yeast cake.

My question is: is the milky layer all healthy yeast that I should put into separate jars?

I don't want to end up putting a lot of useless matter into my separate jars

You might want to read the post from Woodland Brewing Company...has me rethinking yeast. Sounds like plenty of viable yeast in ALL layers.

Usually you have beer/wort on top layer, then yeast, then trub... That looks pretty good. Are you going to wash it again? Also, I have heard to only harvest yeast from a primary and not a secondary.
Personnaly I have had mixed experiences with harvested yeast... a few failures but more successes. Make sure to make a good starter before you pitch.
