Kai.. actually, I'm hoping to get the proper pH in the mash tun without overshooting it. If I undershoot after stirring well, i can always at a bit more.
The ballpark is the question. aj has given a good formula for ballparking if I can find someone smarter than I am to help with it. Once I walk thru it with someone.. I should be ok. We will not be able to add any additional malts to change pH.. as it's using ONLY what's given us.
