Default Best GF brew of 2012?

Well, it is New Year's Eve so I wondered three things about gluten free brewing

1) What was your favorite GF recipe of this past year?

2) What was the favorite recipe of your friends/family of this past year?

3) What is one thing you have learned about GF brewing this past year?

For me....

1) My favorite beer this past year was Grapefruit IPA. This is the only one I am going to re-brew this coming year.

2) The favorite beer of mine that others liked (and liked a lot!) was my 1st Date Dunkel (If you brew this remember to add 1/4oz of cold coffee to 16oz at pour time--that makes all the difference)!

3) Sorghum isn't to be feared--it works excellently with hops (IPA/Pale Ales).

so whether you eat or drink, whatever you do, do it all for the glory of God.

1. My standard GF recipe with sorghum and rice solids. Brewed it about once per month lately and has always been good.

2. Same as #1. Of course it's the only recipe I've brewed/shared so not like a lot of choices!

3A. Using half the fermentables at flameout makes all the difference in the potential off-taste.

3B. I can do the same recipe every time and each time it tastes just a bit differently.

3C. I go from fermenting to bottling. I have learned to be patient, waiting as close to 3 weeks before sampling.

3D. A tiny bit of yeast added at time of bottling seems to help with carbonation/head retention.

I learned everything I know about brewing in 2012. In fact, I just wrote a giant post on my blog detailing everything I could remember about my journey.

My best brew of 2012 was my GF take on a Sierra Nevada Celebration Ale -- basically a copper-colored strong IPA.
