Smoked 1 1/2 hours in my UDS at @250. I "cross hatched" it to make it easier to fork on to crackers. I'll have sour cream and dill but that's just an option; so are the crackers, lol. What kind of beer would folks recommend with this?

I'd go with something Belgian. A witbier wouldn't be too bad. Something on the spicier side of the equation, like an Allagash White.
