Hi guys, I have one more question with this.

I'll be making this on Christmas Eve day. Thing is, I'll also be making mac n' cheese and potato bread as well (towards the end of the day). Can I make this brisket from say, 10:00-6:00 (assuming it cooks within that time), take it out, and make my other food while it "sets up?" And then eat at around 8:00/8:30? Or should the brisket be eaten within an hour to an hour and a half after being made?

I guess what I mean is, can I make this in advance so I can cook the rest of my food that night?

Yes. Wrap the brisket or top of the pan tightly with foil and place in a heated cooler with towels on top (fill cooler with hot water in bathtub and drain). A large cardboard box thickly lined with towels will work as well.

If you ever want to try something a little different from the usual, this carne adovada recipe is pretty great with beef: http://userealbutter.com/2007/10/28/...dovada-recipe/

I made it work with a brisket once. Instead of putting the marinated meat into the oven, though, I put it in my crockpot with just enough liquid to cover the meat. I think I used a malty beer as the liquid and added enough water to just cover it. When the brisket gave up, I took out the done meat and reduced the cooking liquid on the stove. As it reduced, I shredded the brisket, and when it was reduced to my liking, I added the meat back in. I turned it into tamales. Best tamales I ever made. You could do something similar in the oven easily enough.
