Ok. My plan was actually to let it sit with the additions for 2 weeks in primary. Would that extra week be no good?

For my Porters, I add vanilla beans (at the end of fermentation) to my primary all the time. I have also added Oak, Cocoa Nibs & Dry Hops to the primary as well. As @ThickHead said, keeping them in there for 1-2 weeks on the yeast cake is fine. Although I dont keep my beer on most of these flavorings very long for fear of overdoing it, most of them get about <1 week in the primary before I am transferring to a serving keg.
Although I accidentally oaked the crap outta my last porter with 2oz of chips at 7days. Perhaps this is the beauty of doing a Liqour infused mixture, (small dosing) although I personally never liked the taste of bourbon flavored beers.

Don't soak the coffee grinds in alcohol. Boil a mason jar and lid for about 15 minutes or so and cap and let cool down (I just put in fridge for a few hours or over night). I run my grinder through the dishwasher and then just grind the grounds and put them in the sanitized jar with te sanitized water. I then leave jar on counter for a day. Then filter with a coffee filter. Soak the coffee filter in sanitizer for a few minutes first. This method allows for a smooth coffee taste and you won't have off flavored caused by the vodka, whiskey, etc..

I've done 4 coffee stouts in the past year and a half. All were cold pressed and added to the bottling bucket at bottling time. Add mix a little and taste till you get the taste you want. No need to sanitize the coffee for some reason it just seems to work just fine.
