I was surprised nobody had asked sooner. The beer I brew is drank almost exclusively by me. While I am gluten sensitive, I do occasionally go non-GF.

Had "a few" of these this past weekend; my tasting notes are... yummy. For my tastes, in terms of overall bitterness the hopping schedule was good, maybe Simcoe at the end too? Next time I will dry hop (like a boss) for more aroma. Malt base is delicious; love that D-180, but with all the sorghum I may tweak down the molasses to 4oz next time.

My batch also has a bit of Jack Daniels aroma, because I racked it to the secondary on top of the remnants of another batch that had been aging on JD soaked oak cubes. While still yummy, this batch would have been better had I not done that.

At only three weeks in the bottle, I believe this beer will only get better as it ages, only I'm not sure if I'm patient enough to let it age...

Excellent news.... I am going to brew a version of this or the black lodge ale this weekend. I can't decide which. does the malt stand up well to all those hops?

IMO, the malt base and the hopping are a very good match. I will be enjoying many more of these over Christmas week; I'll report back in.

Currently in the process of formulating a recipe. But I'm going to take your base recipe. Combine it with the Bombay after dark black ipa from byo.com magazine ( http://hopville.com/recipe/1656880 ) and I think it should make for an awesome beer.

I'll have this done by the end of March.
