Default Nut Brown Ale

Sorry, no clever name, but I thought I'd share my standard recipe for a nut brown ale and see if anyone has thoughts. It's pretty basic--I've never been a "everything and the kitchen sink" kind of brewer.

Recipe Type: All Grain
Yeast: White Labs WLP007
Yeast Starter: 1 liter, hand shaken
Batch Size (Gallons): 5.00
Original Gravity: 1.047
Final Gravity: 1.012
IBU: 28
Boiling Time (Minutes): 60
Color: 18 SRM
Primary Fermentation (# of Days & Temp): 14 @ 64F
Secondary Fermentation (# of Days & Temp): 7 @ 68F
Tasting Notes: Tastes not unlike Newcastle, but slightly drier and roastier. Great clean finish, hop bitterness is present but not overpowering. This is one of my workhorse recipes, I make it all the time.

Amount Item Type % or IBU
8 lb Maris Otter
.5 lb Brown malt
.5 lb Victory malt
.25 lb Chocolate malt

.75 oz Fuggles @ 60 min.
.5 oz Fuggles at 30 min.
.5 oz Fuggles at 15 min.

White Labs WLP007, 1 liter starter

Multi-step mash*:
30 minutes at 144F
45 minutes at 157F
No mashout, batch sparge

*I've done this beer using both a single infusion and multi-step mash, and I like the results of the multi-step mash better--I prefer this brown ale on the dry side, and I find the single-step mash tends to end up a little on the sweet side for me. That said, the difference is pretty slight and I've really liked the beer made both ways.
