I've done a couple of these and allows just followed the directions exactly. I have one in the carboy now. It's been racked from the original bucket, sulfited, fined, and degassed. I was supposed to rack it one more time like 2 weeks ago but didn't get around to it yet.

Its wicked clear. Is there any reason why I should rack again instead of just bottling as-is.

I wanna drink this stuff!

I would usually rack at this point. That first racking after the finings always seems to bring along some sediment. I like to give it a chance to settle out before bottling.

Just because something CAN ferment, does not mean it SHOULD be fermented.
