Default Cooling and Transfering wort?

Simple questions before starting the second all-grain batch.

Do you usually siphon the wort into the fermenter?

The 32 qt tamale steamer just arrived and I filled it with water to oxidize the surface, then discovered I could not lift and pour 5 or 7 gallons. I ladled it out with a pot. For my 2.5 gallon batches the big pot is very cumbersome.

Do you transfer the 8 gallon pot to an ice bath or use an immersion chiller?

Another expense right off, but the full pot is too heavy to move to an ice bath, and it would take several gallons of ice to drop the temperature.

I installed a weldless valve in my aluminum pot...super easy, plus it is set up to allow a "bazooka tube" to be screwed into the back side. The tube is just a wire screen that helps keep the trub out of the fermenter.

Edit: I use an immersion chiller...

Build (or buy) immersion chiller, cool the wort and then siphon it to fermenter.
It is so much easier than chill it in ice bath.. your back will be thankful.

Thank you for the quick replies.

I will obtain an immersion chiller before the next batch.
The following batch will get a weldless fitting. That helps keep the expenses in line.
