I keep my own yeast on slants and tried to use SO4 but I'm pretty certain it was all dead. I added my WL 500 Belgium yeast. So I either have all Belgium yeast or a mix of the two.
I did my first Graff and went with Windsor yeast... Seemed to do a nice job. I just transfered to a secondary and will probably keg it up Monday.
