Brewed a ris mashed at 155 for 60 minutes. Had a pre boil gravity of 1.060. Added some Dme to get a og of 1.086 fermented for four weeks with wlp 001 at about 72 degrees with a swamp cooler. Beer has finished at 1.030 and is very sweet. Was expecting to finish somewhere between seven and points lower. Should I repitch?
