I want to make a new school saison. I've got some rinsed ECY-03 I'll make the starter with. Ordered some Nelson Sauvin and have Citra, too. I've not used either hop before. Shoot to start around 1.070, finishing around 1.005 hopefully. Around 80% pale & 20 % wheat. I've got some awesome heirloom rye malt that I've used in a couple other beers and might sub 5 to 10% rye for wheat. Suggestions on hop schedule , the Nelson/Citra combo, or rye and these hops?
The only thing worse than dumping beer is serving beer you should have dumped.
