Take a couple cups of it out to give it some head space for any krausen that might form. Once it slows down a little, add the juice back into it. Or rack it then add the juice back in.

I've never done cider..... I might have to give it a try.
Shouldn't be hard to find a good recipe but it seems like a couple cinnamon sticks in there and it would be good to go.
What sort of alcohol level would you expect from fresh non pasteurized apple cider fermented? I know that all apples aren't the same so all cider isn't the same, but an idea?

I bottle in swing tops, but haven't done a carbonated cider yet, bottling one soon though, just waiting for enough time.

Going to my LHBS after work today to pick up a few things and I will be starting this tonight. I will update this thread on the progress. If anyone has any last minute changes or ideas please let me know now before I get started.

I received a tip on some cases if 22 ounce bottles for $5 a case. Big river brewery in Chattanooga had about 2 dozen to get rid of. By the time I got there, they had 12 left...I bought 5 of them
