anyone ever use organic Turkish apricots in secondary? If so, how did the beer turn out? I'm thinking of trying it but not the entire batch, just 1-2 gallons and also wondering how much I should put in. Any help would be appreciated!!!
I've never tried it...but make sure there's no sulfur dioxide used on the apricots. It is often used as a preservative/antimicrobial on dried fruit (particularly apricots). It could interfere with your yeast and/or could impart a sulfur flavor/aroma to your beer.
Not sure if organic dried apricots use it or not, but the label should tell you.
