Sometimes brewing "accidents" are good!
In preparation for my GF's return home, I recently rushed a small batch of Braggot by cold crashing 1 liter of mead that was not quite done with primary (left the rest to finish) and then blending with an IPA. The result was tasty and I moved it to the fridge for about 1 week. We opened it today and it gave a nice loud "pop"! Seems the yeastie beasties woke up again at fridge temps. The result was a naturally carbonated "Sparkling Braggot".
Quite yummy, and the finish was like...tantric sex...very long and complex (hey, my GFs' been gone for a while) with noticeable hops, malt, honey, and just a light touch of CO2 bite. Damn it was good, and pretty too, with nice color and long head retention. Pics attached.
