Is there a chart online somewhere that show what different types of grains convert into? I read somewhere that two row converts into sugars real easy, but what about other grains and what temperaturs work with each?

Maybe http://www.howtobrew.com/section2/chapter12-1.html and then read the chapter on mashing. I am not sure if you have seen this or if this was what you were looking for, if not, sorry.
