My sister in law is getting married in 29 days. I just recieved a request to provide some home brew. Is it possible to brew, ferment, and bottle in 29 days?

I am guessing a low gravity beer would be the ticket. I am about to brew an amber with 8.75 lbs of grain. Might that work?

Low gravity pale maybe biermunchers centennial blonde, for such a short period Ill go with a wheat beer a nice Heffe can be ready in that time brew today or tomorrow, ferment for 10 days bottle and wait.

That doesn't give you much time at all for the beer to carbonate. It could be easily done in a kegging setup, but just carbonation time could take 14-21 days.

You could try a mild, using a highly flocculant English yeast strain. Or a hefeweizen, with a hefeweizen strain (as it's supposed to have yeast in suspension).

It is not a big deal if I decline, so I think I will say no this time.

Do it! I pretty much only make beers below 1.040 and they're ready to bottle in 7-10 days. Go for it, it's not like it's competition beer, just something nice and drinkable for your sisters celebration! Carbonating tabs may speed up carbonation.

Well Im not sure if carbonation taps will speed the carbonation when Ive use them bottles took forever to be ready, there is breweries that bottle condiotion beer and they save them in a warmer room around 90 so they can be ready faster.

+1 Hefe. I'm doing the same turnaround brew in a few weeks to tap on Halloween. 10 day ferment, keg and pop it two weeks later. Even bottling they should be carbed after 2 weeks. I'd be brewing today or tomorrow though to make sure it has plenty of time. Good thing about a hefe though is it will go over well with a large group of people and it doesn't need time to sit and clear, cloudier the better. It's more forgiving if you bottle carb too when serving to non homebrew drinkers. If they pour a bit too aggressively and get some sediment in the glass they won't notice lol. At least not until that night or the next morning when they have some epic gas and beer sh**s.
