Default Salameats

Anyone here ever hear of a Salameat? I grew up in an Italian emmigrant town in Southern Illinois and these sausages were and still are very popular. It's made with pork scrapes, red wine and has lots of garlic in it.
Just wondering if anyone had the recipe for it.
