What is the optimal temperature to store bottle beer. It is a pale ale and I usually keep the house at 72 in the hot summer.

72 is good for conditioning, but once the carbonation level you desire is achieved you should put them in the fridge.

That being said (what you're supposed to do) I have beers that have been sitting on the shelf over 2 years...

As long as the temp stays under 75 or so, they'd be fine to leave at room temp. In a perfect world, you'd store them somewhere around 55.

i have always heard store at room temp (70-75) until you are ready to drink and then chill them.

bottles should stay at about 75 until they are well carbonated, then store at cellar temperatures.
