I scaled up a 5 gallon batch of jack kellers fig wine. it says to rack to secondary when the sg has reached about 1.040 or in about 3-5 days. Well my sg started at 1.090 and is now at 0.998 after 5 days. I checked my reading twice I was so shocked... do I just stabilize and let it clear now?
 
some fermentations are very fast, 3-5 days is just a general guideline, if your sg remains at .998 then yes your wine is done fermenting and it is time to start degassing and clearing.
 
To follow up... it cleared up nice so I bottled it on 9/21 and just opened a bottle (beer bottle sized) to see how it was. Very crisp, clear flg flavor. Good times.
