Sounds like you have everything you need.
What's the AA % on the Hallertau and Hersbrucker hops?
How much water do you boil? I usually only boil 1.5 gals. I also place 4 gals of PUR filtered tap water in the freezer for 4-5 hours prior to brewing.
With that in mind...
Heat up the water. Pour in only 1/3 of a can of the wheat extract and enough hops to equal 3.4-3.8% AA. (I only use 3% AA with 6 lbs of DME, but since you'll be using more I'd up the hops).
Boil for 45 mins. Remove pot from flame.
Add remaining malt from can #1 and add can #2. Stir until dissolved. Let sit for 10 more mins. If you strain your hops out do that while pouring it into the primary. Top off to 5.25 gals. Take temp and gravity readings.
I'd use Wyeast Weihenstephan. Ferm temp about 70-73F for a nice banana flavor.
