I should have mentioned that I do batch sparging, so the pH of the sparge isn't as critical as fly sparging, which takes considerably more time.

But perhaps my beers could be even better if I did monitor the pH of the sparge more carefully. I guess I'll have to do some experimenting with it.

Yeah, pretty close ! No, don't belong to the one just yet but I'd like to find one in a few months from now (right at this time I'm too busy for any extra activities but I figure few months from now it will slow down). Please let me know if you find a good one in the area.
On a different note - have you stopped by the Revolution Brewery that opened recently in the area. It's on Kedzie, just a bit south of Addison. My wife and I stopped by a few weeks ago - didn't stick around coz it was too hot (there is no AC there), but we'll come back when it gets a bit cooler.
