I've seen recipes useing apple juice concentrate. Can I add the concentrate without adding the suggested amount of water to up the sugar and flavor? If so what would be a good ratio do do this with? 1 can for 3 gallons?

Yes. I've used 3-4 12 oz. cans in 5 gallons of juice with good results.
