Riwaka
Green Bullet
Southern Cross
Pacific Gem

High alpha new Zealand hops are clean bittering and not at all harsh. The Riwaka hop is the best darn dual purpose noble hop ever. I can't get enough of them...probably because I can't find them all the time.

Willamette - My go to for American styles
Styrian Golding - My go to for German/Bavarian styles
Fuggle - My go to for English styles
Amarillo - My go to for IPAs and other higher hopped styles

I agree with passed pawn. You need to have a good clean bittering hop.
