I made two different yeast starters for brewing this weekend and after havng everything mixed, pitched and ready to go I find that only one of my two stir plates is working. Thus, I am considering two options and would love to hear opinions or other ideas.

Option 1. Place one starter in the fridge for 24 hours and pull it out in 24 hours when the first starter is done.

Option 2. Leave both starters out and switch them on the plate every 6-8 hours.

I am leaning toward option 1 but I am not sure what the effect of having the yeast at room temp and then transfering it back into the fridge will have on the quality of the starter produced.
