Depends on how much you've got.
Are the goldings East Kent or Styrian. Either way, they'll do well in an IIPA. The Sterling are a substitute for Saaz, with a earthier, spicy aroma that is more suited to a pilsner.
Assuming you brewed 5 gallons, I'd toss in 2, maybe even 3 oz of the Goldings.
