All Grain Recipe

Boil Size: 6.35 gal
Batch Size (fermenter): 5.50 gal
Estimated OG: 1.054
Estimated FG: 1.014
Estimated Color: 7.9 SRM
Estimated IBU: 78.08 IBUs
Estimated Efficiency: 70.00 %
Boil Time: 60 Minutes


Malts

10.25# Pale Ale Malt
1.5# Flaked Rye
1# Munich 20L

Single infusion mash at 1.25 qt/lb for mash of 148 F - hold for 60 minutes


Hops

0.50 oz Simcoe pellets [13% AA] @ 45 mins
1.00 oz Apollo pellets [19% AA] @ 25 mins
0.50 oz Simcoe pellets [13% AA] @ 25 mins
1.00 oz Apollo pellets [19% AA] @ 1 min
1.00 oz Simcoe leaf [13% AA] @ 1 min
1.00 oz Simcoe pellets [13% AA] @ dry hop for 14 days
1.00 oz Apollo pellets [19% AA] @ dry hop for 14 days

* dry hops are in secondary prior to kegging *


Yeast

WLP0008 East Coast Ale - 1000ml starter


What you think about this recipe? Mostly interested in seeing the outcomes of Apollo hops and how the characters of pine from the simcoe and supposed citric peel interact with the spiciness of the flaked rye. Feedback is much appreciated! Thanks

I have used Apollo hops in a couple beers but only for bittering.
As far as your hop schedule i would definitely move the 25 min addition up to 20 or less. I think at 25 you will still get a little to much bitterness.

Crystal malt in a low number is a pretty standard grain for a pale ale so you might want to add a little and play around with your numbers for gravity, perhaps .25-.5lbs of 20? Just my .02

Jmho...but i would seriously consider cutting those Apollo hop additions in half. Maybe even move the 25 up to 10. And like was mentioned add up to 3/4 pound of crystal 10 or 20.

Why cut the apollo hops in half? Is the hop character too dank? Thats some other input Ive gotten from other sources.

Have you ever used Columbus hops?
Apollo are similar and add alot of bitterness and dankness. With 2 ounces after 25 min i think and an ounce dry hop i just dont think it would balance with the grain bill. Jmo

Ok, thanks for the advice. I am going to up the malt bill a bit and drop the hops down a touch.

Revised:

Malts

0.50 oz Apollo pellets [19% AA] @ 5 min
1.00 oz Simcoe leaf [13% AA] @ 5 min
1.00 oz Simcoe pellets [13% AA] @ dry hop for 7 days before kegging
1.00 oz Apollo pellets [19% AA] @ dry hop for 7 days before kegging

This yields an estimated OG of 1.061 & an estimated IBU of 61 for an BU/GU ratio of 1.0, which is very hoppy - but thats what I am aiming for. What you think???

That would be a balanced IPA. If thats what your looking for.
Just another thought. Why not switch the simcoe with the Apollo at 60 min.
Also you have munich 20L. I'm assuming thats cara munich?
